Why is Coneys Frozen Custard so popular?
The process in which the frozen custard is made is different than ice cream. It comes down to air.
Frozen custard has less air in it than any other ice cream products. This gives it an incredibly smooth texture. Coneys uses a special machine that creates a frozen dessert with very small ice crystals and low overrun (air content).
Smaller ice crystals, low air content, and freshness translate into the smoothest, tastiest frozen dessert you have ever had!
What is overrun?
During the manufacturing of ice cream, the volume can double in size by beating air into the mixture. The expansion of the product by introducing air is called "overrun." The volume of air and the size of ice crystals can result in a more coarse texture. Coneys Frozen Custard has less than 20 percent overrun compared to 100 percent with some ice creams. Now that's true value (and great taste, too!)
What is the secret to Coneys Frozen Custard?
The secret is in the barrel where the mix turns into Frozen Custard. Our machine continuously feeds mix into the freezing barrel. The mix is rapidly frozen. Unlike regular ice cream, little air is whipped into the Frozen Custard. With low overrun and small ice crystals, the custard produced is velvety smooth with a rich flavor.
Typically, Coneys Frozen Custard is made daily and served at 18-19 degrees Fahrenheit. Traditional ice cream is made, flash frozen and stored at -20 degrees Fahrenheit, and served at 5 to 8 degrees Fahrenheit.
What are the ingredients?
Our ingredients are confidential! However, just like ice cream, frozen custard has milk, cream, butterfat, and special flavorings. The primary difference is that frozen custard also contains eggs. Coneys Frozen Custard uses its own secret recipes to provide only the highest quality frozen custard.
Where did frozen custard come from?
Frozen custard originated on Coney Island in about 1919. Legend has it that an ice cream vendor decided to add eggs to ice cream as an emulsifier. To his delight a new premium ice cream had been discovered. Kohr Brothers in Charlottesville, VA claims that its founder Archie C. Kohr, invented the first frozen custard machine and took it to Coney Island, where it's said over 18,000 cones were sold in the first weekend. It continued to be sold as a carnival treat and quickly grew in popularity. In the coming years, custard could be found in Atlantic City and other East Coast resort communities.
